If anyone is interested there is a website "recipezaar" that in their community forum has a whole section for specialty diets--Diabetic , celiac etc. It is a site that is hosted by people like yourselves looking for ideas ,support ,advice and recipes and they chat quite freely back and forth. I WOULD LIKE GLUTEN FREE RECIPES AS MY SON WAS JUST DIAGNOSED WITH CELIAC DISEASE. PLEASE HELP!!!

I recently graduated from Culinary school (at 48!). My desire was not to be a famous celebrity chef or even have my own restaurant. I do a lot of cooking for our church and youth group and my new knowedge of techniques and costing has come in handy. The other reason for going was to learn cooking basics so that I could adapt receipes for celiac and other conditions. My husband is lactose intolerant, my Dad has diabetes and both a friend and I are gluten intolerant. I too would love to share some of the things I have learned and to get tips from others like ceiliacconnection.

One tip I have found invaluable is that you can substitute sweet rice flour for regular flour to dredge meats and crushed cornflakes or crisp rice cereal (make sure it is gluten free) for coating to make great chicken fingers, etc. I also use the cereal crumbs as binding in meatloaf - gives a great texture, added flavour and you can use less than bread crumbs.

Also, during the holidays I took several of the Kraft Kitchens recipes and adapted them for all our needs. For cheesecakes I either make them crustless or use gluten free "graham like" crumbs. I also made the Asian Honey Dijon Noodle Salad by substuting rice vermicelli for the vermicelli noodles.

I would love to get some tips and ideas on gluten free cooking. I am new to message boarding so I am not sure how to go about chatting with you

I truly enjoy the Kraft cooking magazines and E mails. It is always a challenge to see how I can change a fabulous regular recipe in something equally fabulous but glutenfree.
I am willing to share my knowledge with any else who requires help. I am no celebrity chef or published author I have taught gluten free cooking classes with Edmonton Public School Board for many years. My husband was diagnose with celiac disease in about 1967
