I have no idea, but it is worth trying. What about butternut squash as well? As long as it is the same consistency, it should work, but again, I have never tried it. What about looking for acorn squash pie, and see what results you get.

Can acorn squash be substituted for pumpkin in a pumpkin pie or other recipes callling for pumpkin puree?
